Goat Cheese Crostini
INGREDIENTS:
- 1 French baguette, sliced into 1/2-inch rounds
- 4 oz soft goat cheese
- 2 tbsp honey (plus more for drizzling)
- 1/4 cup walnuts, roughly chopped
- Fresh thyme leaves
- Olive oil, for brushing
- Salt and freshly ground black pepper, to taste
DIRECTIONS:
- Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet, brush both sides lightly with olive oil, and season with a little salt. Bake for 8-10 minutes, flipping halfway through, until golden and crisp. Set aside to cool slightly.
- In a small bowl, mix the goat cheese with 1 tablespoon of honey until smooth. Taste and season with a pinch of salt and black pepper if desired.
- Spread a generous amount of the honey-infused goat cheese onto each crostini. Top with a few chopped walnuts and fresh thyme leaves.
- Drizzle each crostini with a little more honey and garnish with extra thyme leaves for freshness. Add a final crack of black pepper for a touch of spice.
Pair with Clos du Bois Chardonnay.
